What You Will Need:
1 Pack of Orzo
1 cup of organic almond milk
1/2 cup low fat cream cheese
1/3 cup parmesan cheese + more for garnishing
1 whole onion finely chopped
2 garlic cloves finely chopped
2 tablespoons olive oil used to sautee the vegetables
12 oz of organic chicken breast
juice of one lemon
salt and pepper to taste
fresh leaves for taste
Steps:
Start cooking the orzo in boiling water for 10 to 15 minutes, or until the orzo is well cooked. Meanwhile, finely chop the vegetables and sauté with the olive oil at low-medium heat.
After the onion and garlic has turned lightly brown. Season the chicken with the lemon juice, salt and pepper to taste. Once you have seasoned the chicken you can add it to the sauté pan and cook with the vegetables.
Just when the chicken is about to be fully cooked add half serving of the almond milk, and cream cheese.
Mix well with a wooden spoon until the cream cheese has melted. Add the other half of the almond milk and the rest of the cream cheese with the parmesan cheese. Add the salt and pepper to taste. Now add some pasta water to create a creamier consistency and add the orzo pasta little by little. Add fresh leaves such as parsley, rosemary etc and to give it a last fresh touch. Serve in a wide bowl and decorate with parmesan cheese.
